Patagonian Chinook Salmon

Average Size 18 – 24 Lbs

The species was successfully introduced in Patagonian waters in Chile by single stocking of juveniles in Chiloe Island (Curaco de Velez) in the early 1970’s, for a no longer active Chinook salmon farming/ranching industry. Currently, wild Patagonian Chinooks have been found in several water bodies, colonizing many rivers with spawning populations.

The Antarctic Queen’s sweet and buttery flavored snow-white meat, low in fat. When properly cooked it flakes beautifully. Gaining popularity since it’s arrival in the US market, after a long and successful story in the most demanding markets in Europe.

A Chef’s versatile choice either baked, grilled or natural in ceviche, the Antarctic Queen is undoubtedly an experience any seafood lover should try.

Caught in the cold waters of the Chilean coast in the southern Pacific Ocean, between 150 to 900 ft of depth, it is available fresh almost all year around, Antarctic Queen weighs an average of 6 pounds.

The Chilean Corvina offers a mild delicate flavor, with perfect moisture, bright pink-white meat that flakes naturally.

The Chilean Corvina from the southern Pacific Ocean is an important member of the ever popular corvina family.

A versatile species when prepared brings to mind Patagonian Toothfish, also known as Chilean Seabass. Large loose flakes, silky texture and clean very smooth flavor.

With excellent results in ceviches, Saute, Grill and Broil.

Caught with care by the artisanal fishermen from southern Chile.
